Sa saveur, sa couleur et son ar\u00f4me font que les plats cuisin\u00e9s avec ce produit acqui\u00e8rent une couleur rouge\u00e2tre tr\u00e8s caract\u00e9ristique.<\/p>\n<p>Cet ingr\u00e9dient peut \u00eatre utilis\u00e9 pour les desserts, les p\u00e2tes, la viande, les rago\u00fbts ou le poisson, mais le plus populaire en Espagne est l&#8217;utilisation du <strong>safran pour les paellas.<\/strong><\/p>\n<h2>Comment cuisiner avec du safran ?<\/h2>\n<p>Il n&#8217;y a pas une seule fa\u00e7on de <strong>cuisiner avec le safran<\/strong>, mais si vous savez bien l&#8217;utiliser, vos plats auront une saveur spectaculaire.<\/p>\n<h3>Cuisiner avec du safran est co\u00fbteux ?<\/h3>\n<p>Le prix \u00e9lev\u00e9 d\u00fb au co\u00fbt de production important et la finesse de cette \u00e9pice font qu&#8217;elle est consid\u00e9r\u00e9e comme luxueuse. La plantation et la collecte sont r\u00e9alis\u00e9es de mani\u00e8re artisanale, \u00e0 l&#8217;aube du moment opportun et en s\u00e9parant imm\u00e9diatement les stigmates de la fleur, c&#8217;est-\u00e0-dire la partie que l&#8217;on va utiliser. Le reste est jet\u00e9. Ce travail est enti\u00e8rement artisanal et il faut environ 150 000 fleurs pour obtenir 1 kilogramme de safran.<\/p>\n<p>Cela donne l&#8217;id\u00e9e qu&#8217;il est tr\u00e8s co\u00fbteux d&#8217;utiliser du safran pour pr\u00e9parer vos plats, mais vous pouvez alors lire une s\u00e9rie d&#8217;astuces pour savoir exactement quelle est la bonne quantit\u00e9 de safran pour extraire le maximum de tous vos repas et d\u00e9monter ce faux mythe.<\/p>\n<p>Cette \u00e9pice est utilis\u00e9e <strong>pour rehausser la saveur des aliments<\/strong> et peut parfois remplacer le sel. En raison de son go\u00fbt intense, il ne faut pas utiliser plus de 5 brins par personne et, si vous optez pour la vari\u00e9t\u00e9 moulue, la quantit\u00e9 appropri\u00e9e ne d\u00e9passera pas 30 milligrammes.<\/p>\n<h3>Safran moulu<\/h3>\n<p>Vous pouvez l&#8217;acqu\u00e9rir moulu et pr\u00eat \u00e0 consommer en l&#8217;ajoutant au bouillon de votre rago\u00fbt, pr\u00e9alablement dissous. Vous pouvez le dissoudre dans quelques cuill\u00e8res \u00e0 soupe d&#8217;eau chaude si cela vous convient mieux.<\/p>\n<h3>Le safran dans les fils<\/h3>\n<p>Avant de le consommer, il est conseill\u00e9 de le griller l\u00e9g\u00e8rement ou de l&#8217;\u00e9craser dans un mortier, m\u00eame si de cette mani\u00e8re vous ne pourrez pas en extraire tout le pouvoir.<\/p>\n<h3>Comment est-il grill\u00e9 ?<\/h3>\n<p>Vous pouvez envelopper les brins dans du papier d&#8217;aluminium et les passer \u00e0 travers une source de chaleur, comme une cuisini\u00e8re \u00e0 gaz ou un briquet, pendant huit ou dix secondes, sans les bouger, ou vous pouvez le faire au micro-ondes dans un r\u00e9cipient appropri\u00e9 pendant 15 secondes.<\/p>\n<h2>Recettes exceptionnelles \u00e0 base de safran<\/h2>\n<h3>Riz au lapin<\/h3>\n<p>Pour cela, vous aurez besoin d&#8217;un lapin, d&#8217;un poivron vert, d&#8217;un oignon de printemps, d&#8217;une tomate, d&#8217;un demi-poivron rouge, d&#8217;une petite carotte, d&#8217;huile, de sel, de 300 grammes de riz, de safran et de deux fois plus d&#8217;eau que de riz.<\/p>\n<p>Hacher et faire revenir tous les l\u00e9gumes dans une po\u00eale \u00e0 paella avec de l&#8217;huile. Une fois l&#8217;huile dor\u00e9e, ajouter le lapin hach\u00e9 et bien assaisonn\u00e9. Au bout d&#8217;environ cinq minutes, le lapin sera dor\u00e9, il est temps d&#8217;ajouter le riz et de le faire revenir.<\/p>\n<p>Ajoutez ensuite l&#8217;eau bouillante et le safran. Laissez cuire pendant 10 minutes et rectifiez le sel si n\u00e9cessaire. Mettez au four pendant dix minutes suppl\u00e9mentaires et servez.<\/p>\n<h3>Champignons au safran avec la polenta<\/h3>\n<p>Pour deux personnes, il faut 50 grammes de ricotta, 200 grammes de champignons, un oignon de printemps, un demi-citron, une gousse d&#8217;ail, 200 millilitres de vin blanc, de l&#8217;huile d&#8217;olive, de l&#8217;eau, du sel, de l&#8217;estragon, quelques brins de safran, de la coriandre et du basilic.<\/p>\n<p>Pour pr\u00e9parer la polenta, il faut 25 grammes de beurre, 100 grammes de polenta, 500 millilitres d&#8217;eau, 4 cuill\u00e8res de farine, du sel, de l&#8217;huile d&#8217;olive et une pinc\u00e9e de piment.<\/p>\n<p>Hacher tr\u00e8s finement l&#8217;ail et l&#8217;oignon. Les mettre dans une casserole avec de l&#8217;huile. Ajouter les champignons entiers, nettoyer et assaisonner. Faire griller le safran et l&#8217;incorporer. Ajouter le vin blanc, le laisser s&#8217;\u00e9vaporer et ajouter quelques gouttes de jus de citron et des feuilles d&#8217;estragon frais. Ajouter de l&#8217;eau et laisser cuire \u00e0 feu doux pendant une ou deux heures.<\/p>\n<p>Pour la polenta, faites bouillir une casserole avec de l&#8217;eau et du sel, ajoutez la polenta petit \u00e0 petit, ajoutez le beurre et remuez jusqu&#8217;\u00e0 ce qu&#8217;elle \u00e9paississe. Passez-la \u00e0 la source et coupez-la, une fois refroidie, en b\u00e2tonnets.<\/p>\n<p>M\u00e9langez le piment avec la farine et enduisez les cannes de polenta. Faites-les frire dans une po\u00eale.<\/p>\n<p>Servez les champignons accompagn\u00e9s de la sauce au fromage ricotta, de la polenta et saupoudrez de basilic et de coriandre hach\u00e9s.<\/p>\n<h3>Caldereta de seiche au safran<\/h3>\n<p>Pour 6 personnes, il faut une paire de seiches, des ar\u00eates de poisson, un oignon, quatre pommes de terre, quelques gousses d&#8217;ail, une tomate, un poivron vert, de l&#8217;eau, du safran, du laurier, du persil, de l&#8217;huile et du sel. Avec les \u00e9pines, le persil et l&#8217;oignon, un bon moment de 15 minutes bien assaisonn\u00e9 et pass\u00e9 au tamis. Faire cuire la ciboulette jusqu&#8217;\u00e0 ce qu&#8217;elle soit tendre. Ajouter le poivron coup\u00e9 en d\u00e9s, faire revenir, r\u00e2per la tomate et l&#8217;incorporer et faire cuire encore pendant au moins 5 minutes.<\/p>\n<p>Couper les pommes de terre et les ajouter dans la cocotte, propres et \u00e9pluch\u00e9es. Ajouter ensuite les seiches hach\u00e9es et assaisonn\u00e9es. Ajouter le bouillon, une feuille de laurier.<\/p>\n<p>Piler l&#8217;ail avec le safran et un peu de bouillon. Ajouter le tout \u00e0 la cocotte lorsque l&#8217;\u00e9bullition commence \u00e0 se faire sentir.
