This mummy-style pie decorated with shortcrust pastry is one of our favorite ideas for Halloween. Not only is it a spooky and original recipe for the occasion, but it’s also super easy to make.
Ingredients
- 1 cup sugar
- ¼ cup cornstarch
- Salt
- ⅓ cup water
- 1 cup blueberries
- 1 cup raspberries
- 1 cup strawberries
- ¾ cup blackberries
- 1 tbsp lemon juice
- 2 tbsp butter
- 2 sheets of shortcrust pastry
Preparation
- In a saucepan, boil the sugar, cornstarch, a pinch of salt, and water. Add the blueberries and cook until the mixture thickens.
- In a bowl, mix the remaining chopped berries with the blueberry mixture. Add the lemon juice and set aside to cool.
- Line a round pie dish with one sheet of shortcrust pastry, pressing it against the edges, and fill with the berry mixture. Dot the top with small cubes of butter.
- Use the second sheet of pastry to create decorations, and cut the remaining dough into strips to decorate the mummy pie.
- Bake the pie at 200°C (390°F) for 10 minutes, then lower the temperature to 180°C (350°F) and bake for an additional 45 minutes. Let cool on a rack before serving.
