Extra crispy steamed chicken with potatoes

Ingredients

  • 100 g butter
  • 2 garlic cloves
  • Salt and pepper
  • 1 chicken
  • 1 lemon
  • Aromatic herbs (rosemary, sage, thyme)
  • Potatoes


For the sauce:

  • Chicken cooking juices
  • 100 ml chicken broth
  • 30 ml white wine
  • 1 tbsp cornstarch
  • 3 tbsp water

Preparation

  1. Blend the butter with the garlic cloves, salt, and pepper. Brush the chicken inside and out with the mixture. Stuff the chicken with the lemon and aromatic herbs. Cook in the oven with steam for 50 minutes at 185ºC.
  2. Prepare the sauce by mixing the chicken juices, broth, and white wine in a saucepan. Once it boils, add the diluted cornstarch and cook until thickened.
  3. Meanwhile, boil the potatoes in salted water. Then place them on a tray with salt, oil, and small pieces of butter, and bake at 200ºC (without steam) for 5 minutes.
  4. After this, add the chicken to the tray and bake everything together for 10 more minutes to brown the skin.
