Ingredients
- 150g Margarine
- 150g Dark Muscovado sugar
- 150g Hazelnut flour (ground hazelnuts)
- 300g Whole flour
- 50g Chopped roasted hazelnuts
- 5g Baking soda
- 2g Sea salt
- 2g Vanilla
Decoration (Optional)
- 100g Dark chocolate (75%)
- Caramel-coated hazelnuts bits
Method
Whisk margarine and sugar until well combined. Add the rest of the dry ingredients gently and the chopped hazelnuts at the end.
Once everything is mixed, make small balls of the same size. With the dough and shape the cookies by pressing the balls on an oven tray with parchment paper.
Bake at 180ºC or until the cookies are golden brown. Set aside to cool.
Decorate the cookies melting chocolate at bain-marie and coat half of the cookies. Place them again on the baking paper, add some hazelnut bits to the top and let it cool.
You can change hazelnuts for another kind of nuts and add spices like cinnamon, cardamom, ginger or clove.
