Crispy Potato Towers

Ingredients

  • 2 Medium potatoes
  • 4 tbsp Olive oil
  • 1 tbsp Dried rosemary
  • 1 tbsp Garlic, grounded
  • 1 tbsp Nutmeg
  • 1 tbsp Oregano
  • 1 tbsp Onion powder
  • 1 tbsp Pink salt
  • 1 tbsp Thyme, dried
  • Parsley, dried
  • Pepper, to taste

Method

  • Wash the potatoes thoroughly and then thinly slice them. You can use a mandolin to make sure the slices are consistent.
  • Place the potato slices into a bowl and add the rest of the ingredients to season. Toss well to combine.
  • Grease three muffin moulds and fill them with the potato slices.
  • Bake in the oven at 180°C for 30 minutes or until the potatoes are crispy and golden brown.
  • Remove from the oven and serve hot. Sprinkle over dried thyme and parsley and dip into your favourite sauce to enjoy.
