Peruvian baked chicken with traditional potatoes

Ingredients

  • 2 Chicken Thighs
  • 300g Potatoes

 

Dressing

  • 50g Aji Mirasol Chilli Paste
  • 2 Cloves of Garlic
  • 50g Soy Sauce
  • 15g White Sugar
  • 3g Salt
  • 300ml Orange Juice
  • 2g Cumin
  • 1g Pepper

 

Side

  • Corn Salad (Lamb’s Lettuce)

 

Method

  • Mix all of the dressing ingredients and then pour over the chicken pieces.
  • Let it marinate for 30 minutes in the refrigerator.
  • Meanwhile, boil the potatoes.
  • Remove the marinated chicken pieces from the refrigerator and place the precooked potatoes onto the baking tray.
  • Bake in the oven at 200° C for 30 minutes.
  • Serve with a side of Corn Salad (also known as Lamb’s Lettuce or Mache).
