Batch Cooking: smoked salmon salad with orange, veal and veggies stir-fry wok, salmon and avocado sandwich, veal steak, and cookies

Our Batch Cookings have more bright colours and flavourful tastes each time. Here we go with new recipes to cook our weekly and springful menu to begin the week full of joy.

Ingredients

Smoked salmon salad with orange

  • 100 g Mesclun leaves
  • 2 Smoked salmon slices
  • 4 or 5 Orange wedges
  • Chopped almonds
  • Olive oil
  • Modena vinegar
  • Salt

Veal and veggies stir-fry wok

  • 1 Veal steak
  • ½ Red pepper
  • ¼ Spring onion
  • 50 ml Soy sauce
  • 20 ml Sesame oil
  • 20 ml Rice vinegar
  • 100 g Chinese noodles

Avocado and salmon sandwich

  • 2 Whole-grain bread slices
  • 2 Smoked salmon slices
  • ½ Avocado
  • Cream cheese
  • Fresh dill

Veal steak with veggies

  • 1 Veal steak
  • ¼ Courgette
  • ½ Red pepper
  • ½ Aubergine
  • Salt and pepper
  • Butter

Chocolate cookies

  • 130 g Flour
  • ½ Teaspoon of baking powder
  • ½ Teaspoon of baking soda
  • ¼ Teaspoon of salt
  • 70 g Butter at room temperature
  • 60 g Brown sugar
  • 40 g White sugar
  • 1 Egg
  • 1 Teaspoon of vanilla essence
  • 80 g Chocolate chips

Smoked salmon salad with orange

Prepare the vinaigrette with oil, Modena vinegar, and salt in a bowl. Use a whisker to combine the ingredients. 

Mix mesclun leaves with the dressing and put them in a salad bowl. 

Garnish with some orange wedges, smoked salmon strips or slices, some cheese dices, and sprinkle chopped almonds.

Veal and veggies stir-fry wok

Mix soy sauce, rice vinegar, and sesame oil for the dressing and set aside.

Cook noodles in water with salt and set aside too.

Cut red pepper into thin strips, stir-fry in a frying pan with some oil and save for later.

Add salt and pepper to the veal steak, cut into strips, stir-fry over high heat until brown. Add stir-fried red pepper, noodles and soy dressing.

Cook for a few minutes until the sauce thickens and serve with some chopped spring onions as garnish. 

Avocado and salmon sandwich

Peel and cut the avocado into thin slices and set aside.

Chop fresh dill and mix with cream cheese.

Toast bread slices and spread the cream cheese over them. Add avocado slices and smoked salmon.

Veal and veggies stir-fry wok

Cut the courgette and aubergine into thin strips, add salt and pepper, and brown in a frying pan with oil for both sides until tender.

Cut the red pepper into thick strips and sear in a frying pan too.

Add salt and pepper to the steak and cook in a pan over high heat until brown. 

Serve the steak with sautéing vegetables and a slice of butter.

Chocolate cookies

Mix butter with brown and white sugar. Add the egg and vanilla essence. Whisk with a hand mixer until all the ingredients are well combined.

In a bowl, mix flour, baking powder and soda, and a pinch of salt. Add this to the previous batter. Work the mixture until you have a dough. Add then the chocolate chips. Place in the refrigerator for one hour.

Shape dough balls of the same size, flat a bit, and place on an oven tray with parchment paper. 

Preheat the oven to 180ºC and bake the cookies for 12 to 15 minutes.
